Fresh Cherry Clafoutis (Printable Version)

Juicy cherries baked in vanilla bean custard for a rustic, summer-ready French dessert.

# What You Need:

→ Fruit

01 - 2 1/2 cups fresh sweet cherries, pitted

→ Custard

02 - 3 large eggs
03 - 1/2 cup granulated sugar
04 - 1 whole vanilla bean, split lengthwise and seeds scraped
05 - 2/3 cup all-purpose flour
06 - 1/4 teaspoon fine salt
07 - 1 cup whole milk
08 - 1/4 cup heavy cream
09 - 1 tablespoon unsalted butter, melted and cooled

→ Pan and finishing

10 - Unsalted butter for greasing the pan, as needed
11 - 1 tablespoon powdered sugar, for dusting

# How-to Steps:

01 - Preheat the oven to 350°F. Generously butter a 9–10 inch round baking dish and set aside.
02 - Spread the pitted cherries in an even layer across the bottom of the prepared dish.
03 - In a mixing bowl, whisk the eggs and granulated sugar until the mixture is pale and slightly thickened.
04 - Add the vanilla seeds to the egg mixture, then whisk in the flour and salt until smooth and homogenous.
05 - Gradually whisk in the milk, heavy cream, and melted butter until the batter is fully combined and free of lumps.
06 - Pour the custard batter evenly over the cherries, smoothing the surface so the fruit is submerged.
07 - Bake on the middle rack for 35–40 minutes, until the custard is puffed, lightly golden at the edges, and just set in the center.
08 - Remove from the oven and allow to cool in the dish for about 15 minutes to set further.
09 - Dust the surface with powdered sugar and serve warm or at room temperature.

# Expert Advice:

01 -
  • The luscious custard melts into pools around the juicy cherries—it’s impossible to stop at one slice.
  • It comes together so quickly that it’s my secret weapon when I need a gorgeous dessert with almost no effort.
02 -
  • I once tried to unmold it too soon and ended up with delicious but messy chunks—always let it cool before slicing.
  • Switching to unpitted cherries once gave the whole dessert a subtle almond flavor that’s totally worth trying if you don’t mind a little extra work at the table.
03 -
  • Bring all your ingredients to room temperature for the smoothest, most tender custard.
  • For a next level finish, sprinkle chopped toasted almonds over the top before baking—it adds flavor and a lovely texture.
