Ingredients

  • Meats: 8 oz (225 g) breakfast sausage (pork or turkey) casing removed
  • Vegetables: 1 medium red bell pepper diced, 1 small yellow onion diced, 1 cup baby spinach chopped
  • Tortillas: 6 large (10-inch) flour tortillas
  • Pantry & Spices: 1 tbsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp chili powder (optional)

Sauté Vegetables:
In a large skillet over medium heat, add olive oil. Sauté onion and bell pepper for 34 minutes until softened.

Wilt Spinach:
Stir in chopped spinach and cook for 1 minute until wilted. Transfer mixture to a bowl and set aside.
